Recipe: Tofu & Spinach Salad

A light & healthy Japanese-style salad with a Greek influence!
100g silk tofu (soft tofu)
100g feta cheese
200g of spinach
The juice of 1/2 lemon
2 tbsp of balsamaic vinegar
2 tbsp soy sauce
2 tbsp olive oil
Pinch of black pepper
Pinch of salt
1) Drain the tofu, wrap it in a paper towel and keep refrigerated during the preparation of the salad.
2) Dice the feta cheese and roughly chop up the tomatoes.
3) Remove tofu from refrigerator and dice into equal pieces.
4) Place the spinach leaves into a serving bowl and gently mix in the chopped tomatoes, diced tofu and feta cheese. You can either serve up equal portions between four plates or leave in serving bowl and allow guests to help themselves.
Measure out ingredients to salad dressing into a side dish and mix together. With a spoon, drizzle over each serving. Season with a pinch of salt and pepper.
